
Ingredients

__Red Onion, 1/2 medium sized, chopped
__Yellow or Orange Bell Peppers, 2 medium sized, chopped
__Carrots, 2 medium/large, chopped
__Parsnip, 1, chopped
__Celery, 2 stalks, chopped
__Tomato, 1 or 2 large, chopped or little tomatoes, 2 handfuls, chopped
__Dark Leafy Greens of your choice, 2 handfuls, chopped
__Corn (fresh or frozen), 1/2 cup
__Chickpeas, 1 can drained and rinsed
__Black eyed peas, 1 can drained and rinsed
__Green Lentils, 1 cup, dry
__Snow fungus, 1/3 cup, dry
__Water, 1/3 cup (to rehydrate the snow fungus)
__Veg Broth or Seasoned Water, 2-3 cups
__Garlic, 3-5 cloves, chopped small OR Garlic powder, heavy layer
__Cumin, medium layer
__Paprika, medium layer
__Nutritional Yeast, medium layer
__Salt & Pepper, light layer
Plantiful Skincare Add-ins
__Butternut squash, 1/2, chopped small
__Sweet potato, 1 chopped small
__Okra, 1 handful, chopped
__Broccoli or broccoli stems, 1 large, chopped small
__Avocado, 1 sliced on top of bowl at the end

Measurement Key:
Spoonful = 1 teaspoon (tsp)
Light layer = 1/2 - 1 tablespoon (tbsp)
Medium layer = 1.5 - 2 tablespoons (tbsp)
Heavy layer = 3 - 4 tablespoons (tbsp)
How To
For Stove Top:
Step 1
Combine snow fungus and water in a small glass bowl/ container & let sit for at least 10 mins
Step 2
Add onions, bell peppers, and a few splashes of water to the bottom of the pot
Step 3
Cover and let simmer for about 3 minutes
Step 4
Add rest of ingredients (including snow fungus that has been sitting)
Step 5
Cover with lid and let simmer/cook for at least 30 minutes. Stir often
Step 6
Taste check & enjoy!
For Slow Cooker/ Crockpot:
Step 1
Combine snow fungus and water in a small glass bowl/ container & let sit for at least 10 mins
Step 2
Add all ingredients to crockpot
Step 3
Carefully mix together to combine
Step 4
Set crockpot to high for at least 1 hour then reduce to low heat.
Step 5
Stir often. The longer it cooks in there, the better it turns out!
